Hot Buttered Maple Tomatoes
Hot buttered maple tomatoes to make breakfast less boring
This whole year has been about learning to bring breakfast into my life after years get-up-and-go hospo mornings and I might just….just be getting use to it. While i love love eggs, 3 scrambled eggs day after day after day can tend to get a little boring so this super quick tomato addition makes things a little more interesting. A favourite lunch is a couple of teaspoons of cottage cheese with salt + pepper + olive oil, these hot blistered tomatoes poured over the top, 2x jammy eggs, half an avocado, a handful of rocket with some bread to mop it all up and I’m feeling very fancy. x
Serves 2 ~ half this for one serving
1 punnet cherry tomatoes, cut in half
50g butter
1/4 tsp garlic powder
1/2 tsp red pepper flakes
1 tsp maple syrup
Good 2 pinches of salt
Lots of black pepper
Get your fry pan really hot then throw in the tomatoes, butter, garlic powder and red pepper flakes. Cook stirring for 1-2 minutes til the tomatoes start to blister. Add the maple syrup, salt and pepper then toss together so the tomatoes are glossy. Pour over eggs, avo toast, pasta or Greek yoghurt. Real yum.
